The thing about Snape is that he's a Potions Master. He's awesome when it comes to brewing potions, but not so much when it comes to teaching the basics. He could probably be decent if he just worked at the wizarding equivalant of a university, teaching only those who already had a grounding in the basics. But he's not someone you want teaching kids who've never brewed a potion before.
