I'm right with you on the Spock/Uhura! It is such a pleasure to finally encounter a movie that understands established relationships can be very, very interesting indeed. I love the way the movie showed them as a real couple that goes through things and fights and works things out in just a few short things. where_no_woman is the place for the kind of fic you want, although I don't think anyone has posted STID movie fic yet.
