I think the use of whores in general is gratuitous in this show, considering they get almost no page time in the books, except for Doreah who does no actual whoring while she's with Dany, and Shae. I like them as characters, particularly Roz, but they're not in the show for their characters, they're there to be naked and make people think of sex and the rewards of male power. HBO has the best writers in the business, proved by their hundreds of Emmys. They can find better ways to get information across without using naked women to facilitate a scene. Just sayin.
I took the inclusion of the characters and their profession in the show differently: the nature of the profession is portrayed for what it is but the characters add personal dimensions into the story and showcase their personal strenghths, and the storline makes room for them to double as spies which make them central to points of intrigue. In short, they are who they are and this is the reality of what they do.

Fair point. I remember thinking it was a shame that they didn't trust Littlefinger's actor to carry the scene on his own when he was talking about Catelyn. That said, I really liked the scene with Theon and Roz, because I think it gave fantastic insight into both their characters.

That, I agree with. That scene gives us information about Theon that we don't get in the books until book 3(?) and that part will probably be cut from the show. Also, you see them both fully exposed (not that one brief shot of penis makes up for the overload of naked females, but still).
But the "sexposition" scene with Littlefinger was so contrived and over the top and pointless. It was awful, I could barely pay attention to what he was talking about with all the wailing and gyrating. I'm trying to watch serious drama here and get the biggest insight to Peter Baelish we're ever going to get, and you pull my focus away with softcore. I can't imagine how distracting it would be for a person who likes girls.
