(Actually watching this last run of episodes, I became more and more disliking of romantic Beckett/Castle, and I'm really sorry that its going to be the endgame ship.)

I think Castle respects her as a cop and a friend, but not as a romantic prospect, if that makes sense. I think he's friends with her, I think he likes her, but I think he wants to fuck her because she's hot, because she's Nikki Heat, and because she hasn't gone to bed with him already. Think about how it was framed when she was dating Demming: it wasn't that Rick had LOST something, it was that he wasn't used to LOSING (big difference, imho). If Castle and Beckett got together, Castle would win, and he's win in a way that would mean Beckett lost.
(Furthermore, I am super bitter about the fact that we've seen Castle get into one-night stand and go after chicks throughout the series, but Beckett dates ONE GUY and Castle basically says, 'okay, our friendship (and not just our friendship, but my friendship with all the people I met because of you) is over, Kate breaks up with a great guy who adores her, and Castle goes off to the Hamptons and doesn't call for four months.'
(Furthermore, I am super bitter about the fact that we've seen Castle get into one-night stand and go after chicks throughout the series, but Beckett dates ONE GUY and Castle basically says, 'okay, our friendship (and not just our friendship, but my friendship with all the people I met because of you) is over, Kate breaks up with a great guy who adores her, and Castle goes off to the Hamptons and doesn't call for four months.'
THIS. Castle has his daughter and his mother to go home to, and Kate has no one, but Beckett dating is treated like this great betrayal of Castle/Beckett by the show even though Castle finding relationships/one night stands is perfectly acceptable. And I hated his attitude the entire time Beckett was dating. I think they were trying to even it out: Cate was mildly jealous of Castle's attention to other women in many different episodes, so Castle was super jealous of her relationship, but it was just arrgh. That's not the way to make it more equal.
It's totally not, ESPECIALLY since in the end, Beckett always lets (or doesn't stand in the way of or gives verbal approval) of Castle's lady friends, but Beckett is emotionally forced to break up with Demming so Castle's feelings aren't hurt.
