"Sorry I'm Not Made Of Sugar & I'm Not Sweet Enough For You."
I was reading tv tropes' page on Defrosting The Ice Queen, which (unsurprisingly, as it's often a subset of ruthless girl/emotional open guy) is a trope I really enjoy. Whoever wrote that entry really nailed the ways it functions as wish fulfillment in two different directions:
(I edited the above to be more gender inclusive.)

More emotionally open character: "He/She doesn't hate me, she's just waiting for me to prove my love is true."
Or
Ice Queen: "A warm and caring love interest will fall in love with me and bring me fulfillment and happiness."
Or
Ice Queen: "A warm and caring love interest will fall in love with me and bring me fulfillment and happiness."

1. Dan/Blair (Gossip Girl)
2. Zuko/Katara (ATLA)
3. Wally Artemis (YJ)
4. Razer/Aya if you gender flip this trope. Although I guess tis trope still applies if you think about the final season.

Also, I don't think Katara really hated hated Zuko since she saved him from falling to his death in TSR. She just needed to know that he was very sorry for what he did and that she could trust him.
Some may argue that the pairing doesn't fit the trope because they're not a canon couple but subtextually I think it works.

2. Katniss/Peeta
Right now I'm going through a phase where I find analogies between the two pairings to be absolutely fascinating.
And I'm now watching Arrow because of you. I'm on episode 2, I haven't seen Felicity yet, but I'm already trolling Ao3 for Olicity fic.

This applies to my latest love, Lynn Kurland's Star of the Morning, first in a trilogy, which has a fantastic romance which I am squeeing over so hard because it shows how the chick could believably fall for the dude despite having these walls up, how his sense of humor and his competence are an irresistible combination, and you also see how he could fall for her, even if she is all fierce and aloof, because she's so damn amazing and badass. ♥ I've become so sick of the insta-love that's assaulting me from all corners that it's stunningly refreshing to see a book where the relationship is actually developed!
